How to grow your own lavender for bouquets: a beginner's guide

Lavender isn't just a southern crop. It survives our winters and one bush gives you 20–30 stems — a half-year bouquet. Real experience, not internet theory.

Winter-hardy varieties

English lavender (L. angustifolia) — Hidcote, Munstead. And intermedia hybrid — Grosso, Provence. Avoid L. stoechas (French) for open ground.

Where to plant

Max sun (6+ hours), well-drained soil, airflow, alkaline pH (6.5–8). Avoid low wet spots and tree shade.

Care: minimal but precise

Water: only during severe drought. Overwatering is the #1 killer.
Fertilizer: almost none. Lavender loves poor soil.
Pruning: crucial. Cut back 1/3 every spring.
Winter: protect young bushes first 2 winters.

Harvest timing

Critical: when flowers are 1/3 open. Earlier — no aroma. Later — florets shed during drying. Usually mid-July, morning, dry weather.

Timeline

Year 1: weak bloom, cut before opening so bush builds strength. Year 2: full bouquet. Year 3+: 2–3 bouquets per bush.
